This is one of my favorite recipes to eat for dinner… it is super easy, really yummy and crock-pot friendly. It is based on THIS recipe. I have changed it to suit my food allergies but I think it is even better!
Crockpot Advocare Thai Peanut Chicken
Ingredients:
2 lbs beef stew meat
1 sweet onion
1 red pepper
1 cup natural, creamy Peanut Butter (I use the kind that you actually make in the grocery store)
1 c organic, low sodium beef broth
1 lime (juiced)
1/3 c low sodium coconut aminos (you can use soy sauce but I am allergic to soy)
1 tsp cumin
sprinkle of curry
chopped scallions
crushed peanuts
chopped cilantro
You can serve it over Spinach, arugula, brown rice, or brown rice noodles. I like serving it over brown rice.
I made this entire dish in the crockpot. However, this could definitely be done stove top.
In crockpot…. Throw in:
Beef
Chopped onion
Red pepper
In a bowl, combine PB, beef broth, lime juice, coconut aminos, cumin, and curry. Pour this mixture over the above 3 ingredients. Walk away.
Cook on high for 3-4 hours.
Serve over any of the above. Top with chopped scallions, crushed peanuts, and chopped cilantro.
