This is one of my favorite recipes to eat for dinner… it is super easy, really yummy and crock-pot friendly. It is based on THIS recipe. I have changed it to suit my food allergies but I think it is even better!
Crockpot Advocare Thai Peanut Chicken
2 lbs beef stew meat
1 sweet onion
1 red pepper
1 cup natural, creamy Peanut Butter (I use the kind that you actually make in the grocery store)
1 c organic, low sodium beef broth
1 lime (juiced)
1/3 c low sodium coconut aminos (you can use soy sauce but I am allergic to soy)
1 tsp cumin
sprinkle of curry
You can serve it over Spinach, arugula, brown rice, or brown rice noodles. I like serving it over brown rice.
I made this entire dish in the crockpot. However, this could definitely be done stove top.
In crockpot…. Throw in:
In a bowl, combine PB, beef broth, lime juice, coconut aminos, cumin, and curry. Pour this mixture over the above 3 ingredients. Walk away.
Cook on high for 3-4 hours.
Serve over any of the above. Top with chopped scallions, crushed peanuts, and chopped cilantro.

PSK? Another acronym that I have to translate in my head every time I see it? Yeah, I’m sorry… but at least it stands for something great. And the Young Living Essential Oils Premium Starter Kit is something worth knowing all about. I know that when I got my PSK, I was like “How do I use this? I have all these oils that are supposed to do great things but how do I know what to do with each oil and if I get the flu, how do I use them?” I had tons of questions in the beginning and I am still trying to figure all of them out but I want to share what I’ve learned with all of you here.
First things first, the Young Living Resource Guide is your BFF. It has everything you possibly could need about the oils. There is a new app so that you can have all the info at your fingertips. If you sign up with me, I will give you one of these two resources (your choice) so you can have the info you need.
The second most helpful resource is Pinterest! There are tons of graphics that have information for you to use… all you have to do is type “stomach ache essential oils” or “peppermint essential oil uses”… so helpful!
Also, when you sign up with me you automatically are in a couple super helpful Oily facebook groups. If you have any questions whatsoever, there are tons of people to help you! You can also do searches in the group to find past posts.
The book Gentle Babies is so helpful for mamas and expecting mamas. It helps you know what is safe for babies and for you in pregnancy and post-partum/breastfeeding.

Here are the oils in the Premium Starter Kit and their uses…
The past few months have been spent soaking in the moments with this little gladiator. Her hilarious sense of humor makes my days go by so quickly and they make me want to just yell “STOP!” at time. Everyday she learns more and more and she loves being the center of attention. We went to the dentist the other day and she spent the whole time watching Daniel Tiger (our favorite show), and giving the dental hygienist her very special one eyed Popeye look. She also got this toothbrush and you would have thought I gave her the moon.
Spaghetti for the first time… and she insisted on blowing marinara raspberries all over mama.
Cousins. They love each other. Ok. They tolerate each other right now. My sister Katie and I can’t wait until they learn to play together.
My sweet new nephew, Lucas. Born on January 30, 2014, he truly is the perfect newborn. He sleeps ALL the time and only (barely) wakes up to eat. His dimples are so deep that you could swim in them.

A slight cold makes the best snot bubbles. I couldn’t resist… especially when the bubble lasted for a solid 3 minutes… Does it make me a bad mom that I thought it was hilarious and I was cheering it on not to pop?
We fit all three in the back of Katie’s Honda Civic… it took some maneuvering but we were able to take a trip to Stillwater to see Aunt Karoline. Don’t kid yourself, they all did great the whole trip until the final 30 minutes when s*** hit the fan and Kolbe lost it. Like can’t breathe crying so hard. Poor Katie was trying to calm her from the front seat but she wanted nothing to do with her. As soon as I pulled in to the garage and practically ran around the car to her seat, she gave me a tearful smile and would not let me put her down the rest of the evening. Goober.
Katie and I ran errands with all three… they all fell asleep and approximately 5 minutes after taking this picture, Kolbe woke up. So good while it lasted.
